Scallops with Zesty Lime Cilantro Sauce
INGREDIENTS
1 lb sea scallops (dry-packed)
2 tbsp olive oil
1 tbsp butter
2 garlic cloves, minced
2 tbsp fresh lime juice
1 tsp lime zest
1/4 cup chopped fresh cilantro
1/4 cup Greek yogurt (or sour cream)
1 tsp honey
Salt and pepper to taste
DIRECTIONS
Dry the Scallops Well
Pat scallops dry with paper towels—this step is critical to get that golden sear. Sprinkle lightly with salt and pepper.
Make the Lime Cilantro Sauce
In a blender, combine lime juice, zest, garlic, yogurt, cilantro, honey, and a pinch of salt. Blend until smooth and set aside.
Sear the Scallops
Heat olive oil and butter in your skillet over medium-high heat. Once shimmering hot, place scallops flat-side down. Sear 2 minutes per side, until golden and slightly translucent in the center.
Plate and Drizzle
Transfer scallops to a warm plate and drizzle with lime cilantro sauce. Garnish with extra cilantro and lime wedges if desired.
